Ingredients (use vegan versions):
  • 1 lb Earth Balance non-hydrogenated vegan margarine
  • 1 lb filo dough
  • 1 lb walnuts (ground)
  • 1/4 lb almonds (ground)
  • 3 1/2 cup vegan vegan sugar
  • 1 stick cinnamon
  • 1 teaspoon to 1 tablespoon cinnamon (ground)
  • 3-4 whole cloves
  • 1/4 to 1 teaspoon ground cloves
Directions:

Melt the margarine, mix the walnuts, almonds, 1/2 c vegan sugar and ground spices together. Grease a 9"x13" pan. Layer in five sheets of filo, "buttering" each with margarine. Now alternate layering small handfuls of nuts with two sheets of filo (buttering each. You can get away with buttering every other sheet, but not more.) until everything is used up. Cut into diamond shape pieces (carefully, with a sharp knife), and bake in a 350 degree (F) oven for I believe an hour and 15 minutes, or 'til golden brown (I do this by eye).

While it is baking, in a heavy saucepan, heat 1 c water, and the remaining 3 c vegan sugar, and the whole spices. Bring to a boil over low to med heat, and then turn down and cook for ~15 min. When the stuff in the oven is done, pour the sauce over the top and let it set for a few minutes. Eat Hot or cold.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
