Apple Inside-Out Cake PDF Print E-mail
Ingredients (use vegan versions):
  • 1 package vegan cake mix
  • 1 large granny smith apple
  • vegan sugar
  • vegan brown sugar
Directions:

Make the cake mix as directed. I use blended bananas in place of eggs, 1 large banana per egg, for this recipe and all others. Preheat oven as directed by cake mix (probably at 350).

Once the cake mix is mixed up, pour about a centimeter of it into a 9x13 greased pan.

Peel the apple, and cut into quarters. Then, slice it into thin pieces and lay them on top of the centimeter of cake mix in the pan, trying to leave as little area uncovered as possible

Then, pour the rest of the mix in the pan, let it sit for a second so the top is smooth and it looks like a plain cake.

Bake as directed. Cook it for maybe 2 minutes longer than directed by cake mix, to compensate for the moisture of the apples.

About 10 minutes into cooking, sift a little brown vegan sugar and regular vegan sugar over the top - just a try to evenly spread it over the top.

Let cook a little before slicing and ENJOY. These, I think, are best served a little warm, so if you save them for later, put them in the microwave when you want to eat.

Also, your first bite of this will taste a little gooey - its normal, its good.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
